Maffra Farmhouse Cheddar

This cheddar is made from Cows milk from the lush region of eastern Gippsland, Victoria, hails this smooth, compact cheddar made to traditional methods. Aged for 12 months, it exhibits slight acid on the front palate, full flavour and a clean finish.

Old Telegraph Road Fire Engine Red

A beige and white powdery rind becomes more orange as it matures and is formed from the regular scrubbing of the cheese wheel with Brevi linens. The cheese is matured in cool, dark and damp cellars where airborne yeast and natural flora contribute an extraordinary flavour dimension and runny texture.

Epoisses Chalancey AOC (Appellation d’Origine Contrôlée)

The origins of this washed rind cheese are shrouded in mystery - some say Epoisses was invented at the beginning of the 16th century by Cistercian Monks, but others maintain that the recipe was discovered by farmers wives and passed down from mother to daughter. Epoisses has a shiny orange or straight up brick red rind; its smooth creamy interior melts agreeably on the palate, and its clear cut aroma is slightly spicy.

Petit Gres Champagne

Petit Gres Champagne is a relatively new creation that originates from the Champagne region of North East France. This cheese is individually handmade, with a downy white mould and a striking green leaf placed on top. This is a soft, mould ripened cheese in the style of a Triple Cream, with the addition of crème fraiche giving it a wonderful velvety texture and a delightful fresh edge that cuts through the richness.
